Pink Caesar
SALAD Ingredients:
- 1 large head rosa radicchio
- 1/2 head lusia (or castelfranco) radicchio
- 2 red endives
- 1/4 cup pickled red onions
- 10 chives
- 1/3 cup freshly grated Parmesan cheese
- sourdough croutons (can use pink sourdough)
DRESSING Ingredients:
- 2 anchovy fillets
- 1 garlic glove
- 1 egg yolk
- 1 tbsp lemon juice
- 1 tbsp red wine vinegar
- 1 tsp dijon mustard
- 3 tbsp freshly grated Parmesan cheese
- 1/4 cup extra virgin olive oil
Directions:
- Peel leaves off radicchio heads and endive and remove any wilted or damaged leaves, give them a clean and set aside to dry
- Grate Parmesan and finely chop up chives
- To make the dressing, finely chop anchovies into a paste and add to a small bowl and whisk together all of the dressing ingredients until creamy
- Toss the radicchio and endive with chives, Parmesan and sourdough croutons
- Drizzle the dressing over the salad and toss until evenly coated
- Top with remaining Parmesan, pickled red onions and pink peppercorns
